
Walling's
Meats was first conceived during a downturn in the beef market 8 years ago when
it was decided to market frozen pre-packed meat through the existing ice-cream
outlet on the farm. This proved so successful that the idea of an on-farm
butcher's shop started to form. The scarcity of such operations at the time made
the idea all the more attractive and there was also an almost complete absence
of local cutting plants which could cut up meat for 3rd party sale, such as
farmers' markets. As a courtyard and redundant farm building became available
the owner Alan Walling made the decision to utilize the structure as a butcher's
shop and cutting plant.
Advice from the farm's veterinary surgeon, Alan Pearson, who is also involved in
the meat industry meant that the unit was built and licensed within 9 months.
A fully qualified butcher, Mr. John Baker was added to the team. The closure of
the local village shop has meant that Walling's has become the local shop, but
also serves the whole of Lancashire with Traditional Breed Meats, as
Lancashire's only accredited R.B.S.T (Rare Breeds Survival Trust) butcher.
